Martha's Surprise Cookies

Ingredients

1 3/4 cups plain flour
 3/4 cup cocoa powder, sifted
 1/2 teaspoon bicarbonate of soda
 1/2 teaspoon salt
 125g butter, softened
 1 cup caster sugar
 1 large egg
 1/2 cup milk
 1 teaspoon vanilla extract
 12 vanilla marshmallows, halved horizontally
Chocolate frosting
 2 cups icing sugar mixture, sifted
 1/4 cup cocoa powder, sifted
 75g butter, melted, cooled
 1/4 cup milk
 1/4 teaspoon vanilla extract

Method

  1. Preheat oven to 180°C/160°C fan-forced. Grease 2 large baking trays. Line baking trays with baking paper. Whisk the flour, cocoa, bicarbonate of soda and salt in a large bowl.
  2. Using an electric mixer, beat butter and sugar together until light and fluffy. Add egg, milk and vanilla. Beat until well combined. Add flour mixture. Beat on low speed until combined.
  3. Drop level tablespoons of dough onto prepared trays, about 5cm apart. Bake, 1 tray at a time, for 8 to 10 minutes or until cookies start to spread and become firm. Remove from oven. Place 1 marshmallow half, cut-side down, onto the top of each cookie, pressing down slightly. Return tray to oven. Bake for a further 2 minutes or until marshmallows start to melt. Stand on trays for 2 minutes. Transfer to a wire rack to cool completely. Repeat with remaining tray.
  4. Make Chocolate frosting: Place the icing sugar and cocoa powder in a medium bowl. Whisk in butter. Add milk and vanilla. Whisk until smooth and spreadable, adding a little more milk if needed.
  5. Dollop 1 level tablespoon of frosting over each marshmallow, spreading evenly until completely covered. Stand for 1 hour or until frosting firms slightly.
